It is pretty exciting to be getting beer into barrels at last. We have been transferring several beers this month and lots more going forward. There is a blend of a saison, a brett brux blonde and a brown ale made with our wild house culture in a Chianti foudre, sour browns in bordeaux barrels, blonde ales in champagne barrels, quadruples in whiskey barrels, a beautiful stout and quadruple blend in the cherry wine barrel and so much more. Now they are slowly ageing in our barrel room that I like to call the nursery as thats where I keep my babies. We keep it pretty cool in there as we would like them to develop slowly. Soooooo looking forward to seeing what happens.
