Two things that grow like crazy here on Bornholm; Rosemary and Plum. And we always have gin close at hand. This drink is part plum smash and part gin fizz. In that you smash stuff and top it off with fizzy stuff. But the name ” Plum Rosemary Gin Smash Fizz” just seemed like too much of a mouthful. So the smash bit was left out.

For One Drink:

20 ml rosemary simple syrup (See easy recipe below)
1 lemon wedge
1 Plum wedge
50 ml Gin
Ice
Soda water (the very fizzy kind) or a dry sparkling wine
Rosemary and slice of plum to garnish

Instructions:

Put gin, rosemary syrup, lemon wedge, and plum chunk in a cocktail shaker. Muddle the shit out of it. Add ice and shake!

Strain into a low-ball glass filled with ice and top it off with some soda or sparkling wine.

Garnish and Serve.

Rosemary Simple Syrup

This recipe is very easy to make, and your kitchen will smell so good while you’re making it.
Ingredients
1 cup sugar
1 cup water
4 fresh rosemary sprigs
Preparation

Stir together the 3 ingredients in a medium saucepan over medium-high heat. Bring to a boil, stirring occasionally, and boil 1 minute or until sugar is dissolved. Remove from heat, and let stand 30 minutes. Pour liquid through a wire-mesh strainer into a cruet or airtight container, discarding rosemary sprigs. Cover and chill 4 hours.  Syrup may be stored in refrigerator up to 1 month or until it goes mouldy. Don’t use it than.

Makes about 1 1/2 cups.
