Before we even started brewing at the brewery we wanted to have a play with some yeasts. We wanted to discover what different characteristics and flavours each yeast gave in a controlled way. So we trotted off to visit Jan Paul at Svaneke brewery to get some of there Classic wort and do some tests. The weeks that followed was full of fermenting buckets on our floor heating at home. It is like a special brewery water feature with the bubbling going all night.
Anyway a few weeks later we were able to bottle and start to taste and take notes. It was a great experiment to do as it really tested our tasting skills and also challenged what we thought we knew about different yeasts.
